With Mike Elliot. Through the preparation of a simple vegan meal from scratch,
basic cooking skills will be taught. In this 90 minute class you will learn: how
to cut vegetables (dice, mince, slice, chiffonade), steam vegetables, cook rice,
make a vinaigrette, saute and more. The vegan meal, which you will sample, will
be bruschetta with roasted garlic and roasted red peppers, tossed salad, steamed
vegetables, rice pilaf and sleek (Middle Eastern dish of spinach, black-eyed
peas, caramelized onions and lemon).
